CHICKEN CAESAR SMASH TACOS

Crispy chicken smash tacos topped with crunchy romaine and a creamy homemade Greek yogurt Caesar dressing. A quick, flavorful twist on a classic chicken Caesar.
Ingredients
For the Tacos
- 1 pound ground chicken
- 4 Hero fiber tortillas
- 1 bag pre-washed romaine lettuce
- Salt and black pepper to taste
- Extra-virgin olive oil for cooking
For the Caesar Dressing
- 1/2 cup plain whole-milk Greek yogurt
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 2 tablespoons finely grated Parmesan cheese
- 1 teaspoon Dijon mustard
- 1 small garlic clove finely grated
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon black pepper
- Salt to taste
- 1 –3 tablespoons water as needed to thin
Instructions
- Make the Caesar Dressing: Add the Greek yogurt, olive oil, lemon juice, Parmesan, Dijon mustard, garlic, Worcestershire sauce, black pepper, and a pinch of salt to a blender or food processor and blend until smooth, adding 1–3 tablespoons water as needed to reach your desired consistency.
- Prepare the Tacos: Divide the ground chicken evenly among the 4 tortillas and press it into a thin, even layer across one side of each tortilla, then season lightly with salt and black pepper.
- Cook the Chicken: Heat a lightly oiled skillet over medium heat, place the tortillas chicken-side down, and cook for 4–5 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F.
- Crisp the Tortillas: Flip each taco and cook tortilla-side down for another 1–2 minutes, or until crisp and lightly golden.
- Assemble the Tacos: Top each taco with chopped romaine and a generous drizzle of Caesar dressing, then serve immediately.
Notes
Press the chicken into a thin, even layer so it cooks quickly and evenly.
Ground chicken should reach an internal temperature of 165°F.
If the dressing is too thick, add water 1 tablespoon at a time until it reaches your preferred consistency.
For the best texture, assemble the tacos just before serving so the tortillas stay crisp.
Leftover Caesar dressing can be stored in an airtight container in the refrigerator for up to 3 days.
If using a different tortilla brand, cooking time and crispness may vary slightly.
